Super Easy Buffalo Chicken Soup

I strongly believe in the low carb and high fat approach to eating.  That is what I have found to bring me the most success.   But that is just me and coming from someone with carbohydrate intolerance.

I really enjoy cooking but don't have the time and resources for fancy pants food so I love dump and go meals with minimal ingredients and prep. One of my favorite recipes is this Buffalo Chicken Soup.  It's so easy and very filling. Grey also loved it!


Low Carb Slow Cooker Buffalo Chicken Soup


Buffalo Chicken Soup

Ingredients:
1/2 c diced onions
1/2 c diced celery
1/ c diced green pepper
3 cups whole milk
2 cans cream of chicken soup (Pacific Sun is my favorite brand because it's all natural)
1 pound boneless skinless chicken breast
1/2 c buffalo wing sauce
1 c shredded mozzerella

Directions:
Put diced onions, celery and peppers in a bowl. Microwave 2 mins to soften. Put in slow cooker with the rest of ingredients, except for the cheese. Cook on low 6 hours. Shred chicken and stir back into soup. Stir in the cheese.
